East coast Australian swordfish is called Broadbill which can also be caught along the west coast. They are highly migratory so they are only found in Australian waters during the summer for feeding. While there is some uncertainty around the stock status of swordfish, scientists have assessed stocks caught in Australia are likely healthy. They have a long, cylindrical body and they prey on other fish, crustaceans, squid, and cuttlefish.

Swordfish have white or pinkish-orange flesh when raw, have a mild, slightly sweet taste that turns beige once cooked. They are often compared to beef steak because of their dense moist texture.
