It's called that because it's the Japanese name for this sort of Kingfish, and it's highly prized in their country. This kingfish comes from an Australian aquaculture farm and has white-pinkish tone and firm meat with a sweet and clean flavour when it comes into contact with your mouth.
It's known as a fantastic dad fish since it can be left on the grill for half a can of beer and won't dry out. Hiramasa Kingfish is praised for its great adaptability, whether served as cured, smoked, grilled, fried, roasted as a cutlet, or poached as a fillet in broth. It also combines well with tomato, mushroom, onions, and sweet and sour flavours.
