Freshly air freighted in from Queensland, this grouper is prized for its pleasantly mild yet distinct flavour, thick flake, and ability to efficiently retain moisture. It's a cousin of the sea bass, with a flavour described as a cross between bass and halibut. Queensland groper is a low-calorie fish high in protein and a range of vitamins and minerals, including significant levels of vitamin D, iron, magnesium, and B-vitamins, which are all necessary for normal bodily function.

Barbecuing is a fantastic way to cook this fish since it results in the most tender flakes with a delicious smoky flavour. Wrap the fish in aluminium foil to make it extra tender and moist.
