John Dory is loved for their delicate, white flesh and firm texture. Found in the salt waters of New Zealand, their taste ranges from mild to sweet. They’re very low in fat, but taste like butter that sort of melts in your mouth. John Dory fillets are an excellent source of omega-3 fatty acids that promote a healthy heart and well-functioning brain. They also have anti-inflammatory properties and can even be good for the skin.
John Dory are available all year round and are best prepared sautéed, steamed, poached, or baked. You can even coat them in breadcrumbs and fry them, and you can have yourself some good ‘ol fish and chips.
