The Creamy Garlic Butter Tuscan Salmon provides salmon in a rich and creamy setting, being crusty on the outside but tender and juicy on the inside. It's the perfect meal for the family or a date.
4 pcs Salmon fillets
2 tsp Olive oil
6 cloves Garlic
2 tbsp Butter
1 pc Small onion
⅓ cup Dry white wine (optional)
150 g Sun-dried tomato strips in oil
3 cups Baby spinach leaves
1 tbsp Fresh parsley
1 tbsp Cornstarch
½ cup Heavy cream
½ cup Grated parmesan cheese
Salt and pepper
First, heat the oil in a large skillet over medium heat, then season the salmon fillets on both sides with salt and pepper. Afterwards, sear in the hot pan with the flesh side down for 5 minutes each.
Next, melt the butter in the remaining oil in the hot skillet, then add garlic and onions and fry for one minute. Afterwards, pour on the white wine (optional) and allow it to reduce slightly; also, add the tomatoes and fry for two minutes to release their flavour.
Set to low heat, add heavy cream, and begin to form a gentle simmer with occasional stirring. Add salt and pepper for seasoning and taste alongside your parmesan cheese and spinach leaves to wilt in the sauce.
Allow your cheese to melt through the sauce, add the salmon to the pan, sprinkle with parsley, and spoon the sauce over each fillet.
The meal is ready! You can serve it over pasta, steamed vegetables, or rice.
