Female blue swimmer crabs are a delicacy that is occasionally unavailable due to catching limits. Female crabs have a sweetness and flavour that male crabs lack. Because of their stronger yet more delicate flavours, they are ideal for cooking.

Blue swimmer crab has an intense flavour that is sweet, succulent, and buttery. The claw meat has a nutty flavour, whereas the body meat has a delicate flavour. Blue swimmer crabs are relatively easy to prepare. You can either fry in mayonnaise, steam, poach, or do both (with mustard, garlic or herbs).
