In the waters along the shores of WA, NT, and from Queensland to Montague Island in NSW in Australian seas, mahi mahi, sometimes known as dolphin fish or dorado, are tropical oceanic fish.

Mahi mahi has a mellow, sweet flavour similar to that of many other tropical fish. In terms of flakiness, it is comparable to halibut, but in terms of density, it is comparable to swordfish. Halibut or swordfish can be used as a substitute for mahi mahi if you can't find it.
