The tile fish (aka Amadai/あまだい/甘鯛) are found in the waters of southern Queensland to eastern Bass Strait, but significant landings only occur in the Newcastle/Nelson Bay area off central NSW. Tilefish create thick fillets with a row of pinbones. Salt levels are low in tilefish. They are a very rich source of protein, vitamin B12, and selenium, as well as a decent supply of niacin, phosphorus, and selenium.

Although the meat is pink when it is raw, it becomes white when cooked and has a flaky, crisp texture. Since most of the tilefish's diet consists of crustaceans, it is not unexpected that the flavour is moderate but distinct, frequently being compared to lobster or crab. It can be cooked in many different ways, including baking and frying.
