In case you haven’t heard of Balmain Bugs before, don’t be alarmed: They’re not insects. They’re actually a certain type of lobster that is found throughout the Australian waters. They look different from your usual lobsters because they have broad heads, flat antennae, and no claws. The edible meat is often found in the tail, which comes with a firm texture and medium-to-strong flavour. They appear translucent when raw and opaque white when cooked. 

Balmain Bugs are high in protein and have very little fat. They are most popularly served grilled. You can also poach, steam, or barbecue them and serve them in cold seafood platters with light lemon mayonnaise, dill vinaigrette, or aioli as dressing.
