Venus shells, another name for cockles, are widespread from Tasmania to southern Western Australia and New South Wales. They are perfect for a variety of culinary methods, including steaming, poaching, stir-frying, baking, and grilling, and have a superb flavour and moist, firm meat.

All cockles are sold live to assure a rich, sweet flavour.  Look for beautifully coloured, complete, shiny shells that are closed or close when lightly tapped and have a fresh sea smell. They should be consumed as soon as possible after purchase.
