Live Australian FEMALE Mud Crab (A-Grade)
Mud crabs can be found all along Australia's coast, from NSW to Shark Bay in Western Australia; the bulk of commercial captures occur in Queensland and the Northern Territory, with a few occurring in NSW.
Female mud crabs have creamy roe in them which itself is a delicacy. These "Jennies" are might be a bit smaller than the males but are loaded with a sweet flavour and roe!
With its brilliant colour and decorative claws, it's an excellent addition to any table. For a strong aesthetic appeal and a distinct presentation, keep the legs on. Steam, boil, or poach mud crabs in salted water (25 g of salt per litre), then season with lemon, black pepper, garlic, and onion, which is one of the best cooking ways. Barbecuing or pan-frying the crab can be used to finish it off for the final dish, among other things. Be careful not to overcook the crab in the earlier stages, when adding a little vinegar will make the meat easier to extract. For more ideas on how to cook crabs see our Crab Recipes.
