Cooked Moreton Bay Bugs 150g per piece (Frozen)
Moreton Bay bugs fall under the bugs category. Bugs (also called slipper lobsters, flathead lobsters, reef lobsters) are flat lobster-like animals with flat antennaes. They are usually found on mud and sandy substrates on the sea floor.
In Australia, we have 2 types of bugs - Moreton Bay bugs and Balmain bugs. They share very similar appearance with some minor features which can be used to distinguish them. Moreton Bay bugs have their eyes located on the edge of the head, while Balmain bugs have them located towards the middle of the head. The Moreton Bay bug is also a little thinner in the body than the Balmain bug. Moreton Bay bugs are found along the tropical and sub-tropical Australian coastlines whereas Balmain bugs are predominantly found along the NSW east coast. Both bugs are caught as a bycatch from trawling.
Moreton Bay bugs are not commonly found in all fish shops. However, if you go to Sydney Fish Market or online seafood stores, you will be able to get a hold of some of these delicious lobsters as raw or cooked. They are sold as whole bugs or half-cuts.
These delicious Australian bugs have a flat carapace and the part which we eat is the meat on the tail as there is no meat in the head section. The meat has a medium, sweet and rich flavour (but milder than Balmain bugs). Separate the meat from the shells by either splitting the bug lengthwise or cutting down either side of the tail with kitchen scissors to keep the meat in one piece. Peel the underside of the tailback and remove meat. Do not recook it, Thaw it and serve it chilled with a dipping sauce or in salads.
