Fresh Whole Hiramasa Kingfish Head
Kingfish heads tend to be overlooked more than the rest of the fish, but don’t forget that the fish heads are the tastiest part of the fish meat and are best for making perfect curries, soup, stews and stocks. Kingfish heads have a variety of textures ‒ the eyes offer a fatty-tasting pop, and the cheek meat is dense and fine in texture.
Hiramasa Kingfish head is popular in Japanese cooking. Best served cut in half, grilled with salt and a squeeze of lemon juice.
