Mahi Mahi, also known as dolphinfish or dorado, are a tropical oceanic fish that can be found off the coasts of WA, NT, and from Queensland to Montague Island in NSW in Australian seas.
The flesh of mahi mahi is pale pink and lean; when cooked, it turns flaky and white that is comparable to Halibut. It has a gentle, sweet flavour. In terms of density, it is comparable to swordfish. It is both firm enough to withstand grilling without falling apart and tender enough to steam.
