Broadbill is a swordfish native to Australia's east coast that is also caught on the west coast. Due to their extensive migratory patterns, they are only seen on Australian seas in the summer when they are feeding. They are predatory fish with long cylindrical bodies and characterized by a long, flat, pointed bill.
The flesh of swordfish is white or pinkish-orange when it is raw. It has a mild, slightly sweet flavour that changes to beige when cooked. As a result of their rich, moist texture, they are sometimes compared to beef steak.
