Australian Wahoo Cutlets per kg (Frozen)
Wahoo has a mild flavour, a firm, lean texture, and a big, cirrhotic flake. Despite being a diverse fish, wahoo benefits from cooking techniques appropriate for species with low fat content to prevent the meat from drying out during cooking.
It should be prepared similarly to Spanish mackerel but with a little more flavour. It tastes great when grilled and served as a bone-in cutlet (bone in = better). The cutlets bake up beautifully as well. In an oven tray, stack the cutlets, then scatter the lemon wedges, garlic cloves, and oregano. Finally, drizzle the cutlets with the white wine and olive oil. After baking the fish for 10 to 15 minutes, take it from the oven and, if possible, pour out the liquid and let it simmer until it thickens into a delicious sauce. YUM!
