Hiramasa Kingfish is also known as Yellow Kingfish. It has that moniker because the Japanese have a very high regard for this particular variety of Kingfish. This kingfish, which found around the East coast South Australia, has firm meat that is white-pink in colour and has a pleasant, clean flavour.

It is referred to as a great dad fish since it can be grilled for half a can of beer without drying out. When served cured, smoked, grilled, fried, roasted as a cutlet, or poached as a fillet in broth, Hiramasa Kingfish is acclaimed for its outstanding flexibility. Additionally, it pairs well with flavours like tomato, mushrooms, onions, and sweet and sour.
