Live Whole Red Sea Urchin (Short Spined) 2 Urchins
The south coast of Australia is home to the red sea urchin, which is found there. Its colour ranges from red to burgundy. Sea urchins have an umami-salty sweetness because they are rich in sugar, salt, and amino acids. They often taste like the seaweed they eat, much like oysters. However, all good urchins should have a buttery, melt-in-your-mouth texture and a rich, distinctive flavour that has been compared to eggs, lobster, foie gras, and fish roe.
Uni is an emulsifier and can help thicken soups, custards, and sauces like mayonnaise, béchamel, and hollandaise. Use raw sea urchin on top of decadent pasta or add it to uni sushi. Serve with lemon juice and crackers when raw. Incorporate it into a marinade for yakitori or a barbeque.
