One of the most iconic and most beautiful crustaceans, the western rock lobster is a member of the lobster family with a beautiful appearance that is a sight to behold. It is one of the best known lobsters on the dining table for Australians, as well as, people around the globe.
Western rock lobster meat is succulent and packed with intense flavour. Australian western rock lobsters are wild caught and they are caught at an optimal size for consumption. It has a sweet, rich flavour, is low in oil, and has a juicy, medium-firm flesh that is translucent when raw and white with orange tinges when cooked. Leg meat has a sweeter flavour than tail meat.
Steam, poach, deep-fry, pan-fry, stir-fry, bake, grill, barbecue, raw (sashimi). The firm flesh holds together well during most cooking methods. Cook them a little less than fully since they will continue to cook in the residual heat. Stocks, soups, and sauces can all benefit from the carapace's flavour.
