Crabs with soft shells? Crabs that are in the process of shedding their shells to grow a new, larger shell are known as soft shell crabs. The fat layer beneath a crab's shell contains the most powerful, sweet flavour. It's why soft-shell crabs, which are eaten whole, are highly regarded around the world. You'll find this on the menu at most Japanese restaurants.
They produce a gorgeous nibble whenever deep-fried in a delightfully crunchy and light beer batter. If you put some on your favourite seafood platter the next time someone comes over, they will not be disappointed. We prefer ours marinated in extra-virgin olive oil with a variety of fresh herbs and garlic. Then we put in a Barbie for about two to three minutes on each side. There's no need for sauce!
