Ingredients
ยท 1 pound pasta
ยท ยผ cup tablespoons cooking oil
ยท ยฝ onion, diced
ยท 1 green bell pepper, diced
ยท 3-4 cloves garlic, sliced
ยท ounces tomato paste
ยท 20oz. diced tomatoes
ยท 1 teaspoon salt and ground black pepper
ยท 4 tablespoon chopped parsley
ยท ยผ teaspoon cayenne pepper

ยท 1 pint oysters, oyster liquor reserved
ยท Grated Parmesan cheese
Directions
ยท In a large pot, heat oil over medium heat with the onion and bell pepper.
ยท Add the vegetables, garlic and tomato paste; cook for 5 minutes.
ยท Mix in parsley, diced tomatoes, salt, peppers, and the reserved oyster liquor.
ยท Cook for 30 minutes to allow the sauce to thicken slightly before adding the oysters.
ยท Add the oysters and cook for about 5 minutes, then serve over your favorite pasta.
ยท Garnish with the Parmesan cheese.
