Simple and delicious chawanmushi (savoury egg custard) with clams This chawanmushi is a simple Japanese appetiser that will amaze your taste buds. “Chawan” means rice bowl and “mushi” means steamed in Japanese. It is a savory and flavoursome dish.
You can substitute the dashi stock with any soup stock you have at home. Although dashi stock is the best for making Japanese dishes, it won’t make a big difference. You can also add any fresh or frozen seafood you like to make it more enjoyable.
Let’s start!
280 ml dashi stock/anchovy fish stock/chicken stock
1 tbsp mirin
1 tsp cooking sake/ chinese rice wine
2 eggs
6 slices of naruto (cured fish surimi)
6 pieces of Westhaven New Little Zealand Little Neck Clams
Chopped onions for garnish salt
Wash the clams in hot water for a minute.
Mix the dashi stock with 1 tbsp soy sauce, 1
tbsp mirin and 1 tsp cooking sake/rice wine and a bit of salt in a large bowl. Mix well.
Lightly beat 2 eggs in another bowl.
Add the dashi mixture into the egg mixture
gradually.
In two rice bowls/ tea cups/ mugs, put 2 drained clams in each bowl. Slowly pour in the stock/egg mixture and fill up to three-quarters full.
Steam the bowls for 1 minute on high in a
steamer. Turn down to low for another 8 minutes.
When the egg mixture is slightly set, place 1-2
clams and sliced naruto on top and steam for another 5 minutes on low.
Finally sprinkle chopped onions to finish!
