Ingredients
ยท 750 grams bangus (milkfish) belly fillets
ยท 8 shallots
ยท 8 to 10 cupsfish broth
ยท 2 to 3 tablespoons cooking oil
ยท 2 to 3 tomatoes
ยท 1 bunch onion leaves
ยท 1/2 head garlic
ยท fish sauce
ยท pepper
Directions
Crush and peel the garlic. Peel the shallots. Chop the tomatoes and cut the onion leaves into 1 inch lengths.
ยท Cut the milkfish belly fillets into serving size pieces or four portions.
ยท Heat the cooking oil in a pot & saute the garlic, shallots and tomatoes until they start to soften and render color.
ยท Pour in the fish broth. Season with fish sauce then bring to the boil.
ยท Add the fish belly fillets, allow to broth to boil again, lower the heat and simmer for about 3 minutes
Add the onion leaves to the cooking pot. Sprinkle with pepper. Stir gently and simmer for about 30 seconds longer. Serve and enjoy!
