Stir Fried Pipis in XO sauce
Shaoxing Wine 4 tbsp (You can easily purchase a bottle in the Asian groceries aisle in supermarkets)
Chopped ginger 1tbsp
Chopped garlic 1tbsp
Chopped chilli 1tbsp
XO sauce 3-4 tbsp (You can easily purchase a bottle in the Asian grocery stores)
Soak the pipis for half an hour to de-sand..
You can also purchase Fresh Goolwa Pipis per kg (Ready-to-Cook) to save you from having to do de-sanding.
Add pipis into a pan of boiling water and remove the pan from the stove once the pipis have opened up.
Run the pipis under cold tap water for 2 minutes then drain the water out.
Add ginger, garlic and chilli into the wok and stir fry them together until the garlic turns golden.
Add pipis onto the wok and stir fry them with the ginger, garlic and chilli for 1 minutes.
Then add shaoxing wine into the wok and stiry fry. Then you are ready to serve your delicious XO pipis!
