Ling are widely distributed throughout New Zealand, however they are primarily captured by trawl or longline along the Campbell Rise and the bottom of the South Island.
The ling is an eel-like fish with irregular, pale bar-like markings and blotching that give the fish a mottled look. It is orange-pink above.
Ling fillets are firm, boneless, and adaptable. They maintain their shape when cooking and have a moderate flavour. Practically every preparation method—baked, fried, barbecued, casseroles, curries, poached, smoked, steaming, soup/chowder—results in tenderness when done perfectly.
Due to the high level of moisture retained in the fish meat, pan-fried or panko ling fillets are also very well-liked. Due to their complete lack of skin and bone, these fillets are also ideal for meals for children.
